These muffins were pretty good without the apples, but once I added in the apples – oh my! My step-daughter wants to try pumpkin next time. Adapted from “Dial Delicious, Vol 3” cookbook by Prince Albert Telephone Operators

Prep Time: 15 minutes Cook Time: 30-45 minutesIngredients
2/3 cup Butter, softened
1 cup Brown Sugar
1 teaspoon Cinnamon
3 1/2 cups Flour (plus more for rolling out)
4 teaspoons Baking Powder
1 teaspoon Salt
1 cup Milk
1/2 cup Butter
1/2 cup Brown Sugar
1/2 teaspoon Cinnamon
1 1/2 Apples, peeled, sliced in eighths, then sliced thinly from the short side.
Directions
1. Mix together the first 7 ingredients. Use 3 cups flour first, then add in a little more if dough is still wet. Dough will be very soft.
2. Roll out into a large rectangle. Spread with the ½ cup butter. Sprinkle with ½ cup brown sugar, ½ teaspoon cinnamon and the apple slices. Roll up lengthwise as for cinnamon rolls. Cut roll in half, then in half again, then in thirds. You should have 12 pieces.
3. Place pieces in greased muffin pan – one piece per muffin. Place on their sides so you can see the layers. Sprinkle top of muffins with granulated sugar. Bake at 350 for 30-40 minutes.
They’ll bake over the muffin edge, but they’ll look like flowers…
