My great aunt from WV used to make delicious homemade yeast rolls. I remember her boiling potatoes to add to the dough, but I never watched to see what she did to the potatoes and how she completed the process to make the dough. Does anyone have that old fashioned recipe? I would really like to have the recipe so I can try the rolls. Thanks.

I am pretty sure that those are a ‘refrigerator’ roll. Meaning the dough was made and you could refrigerate and use what you wanted when you needed it OR that it was formed in rolls, held in the frig to rise a little and slowly and then straight into the oven. I’ll look in some of my old community cookbooks.

I just submitted a recipe for Potato Refrigerator Dough. I’ve used it countless times. It’s really easy, versatile. You can make anything from rolls to doughnuts with the dough. It keeps in the fridge for about a week.
You can also substitute potato water for the liquid in any bread recipe. I’ll drain the liquid from my canned potatoes and use that to make bread. The additional starch seems to make the yeast develop well and keeps the bread very moist.
