A very hearty, satisfying soup to warm you up on a cold day.

1/2 cup dry lentils
3/4 cup chopped onions
1 clove garlic, minced
2 Tbsp. butter
5 cups water
1 1/2 tsp. fresh oregano or 1/2 tsp dried oregano, crushed
1 1/2 tsp. fresh basil or 1/2 tsp. crushed dried basil
1 tsp. instant chicken bullion granules
3/4 tsp. fresh rosemary or 1/4 tsp. dried rosemary, snipped
1/4 tsp. pepper
1 1/2 cups diced ham, fully cooked
1 cup carrots, thinly sliced
1/2 cup quick cooking barley
1 14oz. can diced tomatoes, undrained
Directions
Rinse and drain lentils. Set aside. In a large saucepan, cook the onion and garlic in butter until tender, but not brown. Stir in the lentils, water, oregano, basil, bullion granules, rosemary, and pepper. Bring to boil, then reduce heat and simmer, covered, for 30 minutes. Stir in the ham, carrots, and uncooked barley. Simmer covered, for about 20 minutes more or till carrot slices are tender. Stir in the undrained tomatoes and heat through.
