Hello everyone, last year around the holidays, I had a piece of the most delicious candy, it was a very buttery, very thin brittle with roasted cashews and then dipped several times in a very dark chocolate–it was fabulous. Has anyone made anything similar, if so, I would love to have the recipe.

I toss cashews into a double boiler of dark chocolate from time to time, then sprinkle with some coarse sea salt to get that chocolaty-good salty-sweet taste sensation. There’s something about sweet and salty that has a bit of magic about it.
I’ve never seen any buttery brittle/brickle sort of chashew delight… it sounds wonderful though! Yum. I’m going to go hunting for something of the sort though!

I wonder if you could make an almond rocha recipe and use whole or broken cashews rather than almonds – breaking the rocha as it cools and then dipping it in melted chocolate goodness?

Sounds like it may have been a recipe for English toffee that someone subbed cashews for instead of almonds and then covered with a layer of chocolate. I’ve had a similar recipe from a little candy shop here in Blue Ridge. Wish I had the recipe they used because it WAS good!
