I have acquired a beef tongue from my “meat guys” at the Farmer’s Market. I know Grandma used to just boil it (I think), but wonder if anybody has any other ideas?? Any experience???

I cooked my tongue in a crock pot (a low oven would work) for 4-6 hours, then removed from the pot, let cool a little bit till I could handle it with my hands, and the “skin” just peels off. You should be left with a large raost in the shape of a tongue… be sure to use lots of salt and other seasonings when you start it. After skinning it, I shredded it and added a few mexican seasonings and let it simmer in the crock pot again till it was a fitting burrito filling.

My mom made this quite often in the 50s and 60s. She boiled the tongue with th same (pickling) spices she used for corned beef and similar. Lots of peppercorns, bay leaves. Like Rachel, we removed the skin (and bones) as soon as we could handle the tongue. Dinner: tongue with boiled potato and cabbage. Sandwiches later in the week: rye or pumpernickle, slathered with mustard and horseradish. Sometimes: chopped fine with fine celery, sharp pickle, chopped egg for sandwich filling. Would love to find it here in city to make once in a while. Ahh, when parts wuz parts!
