Years ago (like maybe 35?) I had a yellow squash side dish at a chain restaurant called “Dixie House” that was out of this world. It tasted like it was only yellow cheese, squash and soda crackers, but putting that together in a pan and baking it at home did NOT produce the same (or even similar) result!
Somehow that restaurant managed to make the dish crunchy and creamy and heavenly. Am guessing it is a southern specialty, but have never seen it quite like that one. Managed to sneak a peak at an unbaked pan of the casserole and it LOOKED like it was only slices of the squash with shredded cheese and crackers, too!

Preheat oven to 350 F.
Rinse and trim ends of squash. Cut squash into 2-inch pieces. Place in boiling, salted water until just tender, about 10 minutes. Drain in colander; mash to remove remaining liquid. Drain for 10 minutes.

Zucchini Casserole
3 cups diced zucchini or yellow squash
1-1/2 cups cracker crumbs
3 beaten eggs
1/2 cup melted butter
1/2 tsp salt
1 cup milk
2 cups cubed velvetta cheese
Mix well, put into covered casserole dish. Bake at 300 degrees for one hour

Must still wait a bit, but will try BOTH of these recipes, or at least get some squash prepped and frozen to bake it when it feels right to once again turn on the oven!
