My husband’s aunt used to make apple jelly from the peelings. She told me how to do it but that was over 30 years ago. I didn’t write it down. Does anyone have a recipe or know how to do it?

Oh! my grandmother did apple jelly made from peels and cores left from making apple butter. She’d pile all the ‘leftovers’ into a pot with water just to cover and boil them with a cinnamon stick (maybe two?). Then she’d follow the directions on a single pectin box for apple jelly after straining and reducing (if necessary) to the required amount. I recall BIG pot for apple butter, so lots of apples to start, but small amount of juice for one batch of pretty pale apple jelly.
Like your aunt, this stretching of apple peels/cores was never written down in her recipe collection. That would have been too easy! Good luck!
