This is an excellent salad – refreshing and delicious! Great use of leftover chicken or turkey. When I make this for a large crowd, I bake turkey breasts.

Ingredients
Cooked, chunked or chopped chicken or turkey
Diced celery
Diced sweet gherkin pickles
Halved seedless grapes
Small amount finely cut pineapple
Chopped pecans or walnuts
Directions
Mix chicken or turkey with celery, pickles, grapes,
pineapple. Add only enough salad dressing (such as Miracle Whip – NOT mayonnaise for this) to the consistency/moistness you prefer.
I sometimes serve this as a mound (molded in a cup) on pineapple rings with the nuts sprinkled on top
(in case someone cannot eat nuts). Have also served it on croissants, on a lettuce leaf, etc. You can add in the nuts with the vegetables also. I like this with pecans.
