a very good muffin…this makes a lot of muffins…I freeze some for another day.

Cook Time: 15-20 minutesIngredients
4 eggs lightly beaten
2 cups white sugar
1 1/2 cups cooking oil
1 3/4 cup pumpkin
3 cups all purpose flour
1 tablespoon cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups raisins (optional)
brown sugar
Directions
Blend eggs, sugar, oil and pumpkin and beat thoroughly. Add all dry ingredients and mix until smooth. Stir in raisins if using.
Fill greased muffin cups 2/3 full and sprinkle tops with brown sugar.
Bake at 375 degrees for 15-20 minutes
