A cool, light berry dessert for a hot day.

1 large package raspberry jello (or 2 small packages)
1 can unsweetened applesauce (or 2 cups)
1 regular-sized bag of frozen raspberries
sweetened whipped cream or Cool Whip (optional)
Directions
1. Boil the amount of water as directed on the jello box (2 cups). Meanwhile, dump the dry jello powder into a 9½” x 11” baking dish (or some dimension around there. The smaller the pan, the deeper the jello.) When the water has boiled, pour over dry jello powder. Stir with a spatula until the sugar has dissolved (about 5 minutes). Note: Do NOT add the cold water from the directions on the jello box.
2.Next stir in the 1 can of applesauce until mixed in well.
3.Dump the bag of frozen raspberries into the mixture and spread them out evenly, stirring them in to coat with the jello. Place the baking dish in the fridge uncovered until set. The uncovered part is really important. It won’t set otherwise.
4. When firmly set (1-2 hours), spread whipped cream over the top, if desired, and serve!
