I am looking for recipes for sugar-free or low-sugar jams/jellies – especially strawberry/blueberry/blackberry.

Bren, I only use Pomona Pectin, it comes with recipes for low, no sugar and using honey. If you can’t find it locally, just google it. I buy it by the half pound instead of in boxes.

I use the Pomona Pectin, too, after Jeannie talked about it so much! It’s very easy to use and one box makes lots!

Bren~ I make Strawberry Freezer Jam with dried pineapple slices and frozen strawberries. Thaw the strawberries(one small bag (They get really juicy)). Put the pineapple slices (I use three but you could use as many as you want) in the bottom of a shallow dish and pour the strawberries over them and let them sit for a day or two (in the fridge or on the counter) and then put the whole lot in the blender and puree. Put into containers and freeze! Delicious.
