My Godmother used to make this delicious pie for me when I was little, but I can’t really remember the whole recipe. I remember she started with dried apricots and added a little sugar and stewed them down in her little double boiler. Then they were added to the bottom of an unbaked or baked..I forget..pie crust and some sort of egg custard filling was put on top of that. Sound familiar?? Help!

In the recipe cornstarch is added to the apricot juice and heated until thickened….I’m thinking that this would look a lot like the egg custard you mention.
If it is the Dried Apricot Pie that your Godmother made, I’ll leave it to your to submit the recipe.
