Make your own healthy whole grain pancake mix. I used a recipe from allrecipes.com, replacing the buttermilk with buttermilk powder. All you need to add is water and an egg to cook these.

Ingredients
DRY MIX:
1 cup whole wheat flour
1/2 cup rolled oats
1/4 cup cornmeal
3 tablespoons flax-seed meal
3 tablespoons brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
8 tablespoons buttermilk powder
TO COOK:
1 egg, beaten
2 cups of water
Directions
Combine DRY MIX ingredients and store in an airtight container in the refrigerator (the dry buttermilk is labeled refrigerate after opening).
When you are ready for some fluffy, delicious pancakes, add 2 cups of water and 1 egg. Stir until just mixed. Cook on lightly oiled griddle.
I generally make 4 mixes at once and store them in plastic bags in the fridge. So handy to grab a bag and whip up some homemade, wholesome pancakes!
