This is the real cooked version of southern banana pudding. It’s actually doubled up already because the original version was just never enough. It’s great for breakfast too!
Difficulty: Easy
Servings: 8-10
Prep Time: 10 minutes Cook Time: 15 minutesIngredients
1 cup sugar
4 Tbsp. plain flour
1/2tsp. salt
4 cups milk (canned milk works well)
6 egg yolks (save the whites in separate bowl)
2 tsp. pure vanilla
Directions
In a saucepan, put sugar, flour, salt, milk, egg yolks. Stir with wooden spoon over medium heat till boiling. Boil for 2 minutes stirring. Add vanilla and remove from heat.
If you have the time, let it cool down a bit. If you are rushed, set pot in a sink full of cold iced water making SURE the faucet is turned away.
In bowl, cut up bananas and make a layer of bananas, a layer of Nabisco nilla wafers and a layer of the cooled custard. You should get two layers of each. Now for the topping….
Preheat broiler. Beat egg whites till stiff adding 2 Tbsp sugar. Fold onto middle of pudding and spread out to edges. Put under broiler till light brown about 2-5 minutes. Don’t walk away! Chill and enjoy!
