Looking for recipes using steel cut oats (which I bought because they were on sale!). Can I use them in cookies etc instead of the rolled oats?

I have a 25 lb bag of steel cut oats… it’s been too hot to really bake but I have been using them in my granola recipe instead of the rolled oats and no one in the family has noticed a difference. Also, my instant oatmeal mix calls for processing half in the food processor, so I’ve been using the steel cut for that part(probably defeats the benefits of the steel cut, though, to process them into powder, no? Like I said… 25lbs to use, so I’m desperate!)
