1/2 of a watermelon
1 cup crushed pistachios
4 – 6 ounces goat cheese
Scoop watermelon into balls, place in bowl (either one large bowl or individual ones). Top with crushed pistachios. Sprinkle with crumbles of goat cheese. Sparingly drizzle with balsamic vinegar.
Refrigerate until ready to serve – could be served as a salad or a light dessert.
