1 package flour tortillas (or home made if you don’t want easy)
3-4 cups grated cheese to suit your taste (cheddar, monterey jack, pepper jack, colby)
Spices (cumin, chili powder, chipotle powder, paprika)
Take one flour tortilla and sprinkle liberally with your choice of cheese. Lightly sprinkle spices on top of the cheese to suit the individual. Top with a second flour tortilla. Spray a frying pan with non-stick cooking spray and lightly toast both sides. Cut into wedges and enjoy.
