Pina Colada Fruit Salad

In a small mixing bowl, thoroughly mix the drained, crushed pineapple into the yogurt. Set aside to allow the flavors to blend well.

Place all of the drained fruits in a large mixing bowl. Add the coconut, walnuts, and marshmallows.

Add the apples, bananas, and any other fruits. Do NOT peel the apples as the color is a nice addition to the presentation!!

Pour the pineapple/yogurt dressing over the fruits, nuts mixture and gently stir to blend well. Be careful to not bruise the fresh fruits!

This salad will store well for one overnight. It doesn’t last well past that point.

In the interests of saving time, I often mix the dressing in one container the night before, then mix everything else except for the fruits in another container and store both in the refrigerator overnight. The drained pineapple and fresh berries can go into another container also into the refrigerator, overnight. The following morning mix them all together into one large bowl and add the apples and bananas. This goes relatively quickly in the morning and it is then ready to serve.
