Peel and chunk sweet potato into approximately 3/8” cubes. Wash white potato and cut into same size cubes.

Put potatoes on sheet pan and coat with olive oil. Now season the potatoes with fresh parsley, garlic, salt, pepper, and sweet paprika making sure to stir thoroughly and coat all potato cubes. Spread evenly on pan and bake.

Bake at 375 for 30-35 minutes. Outside should be slightly firm but center soft.
