12-16 oz. water at 80 degrees
1-1/2 teaspoons salt
2 tablespoons brown sugar or honey
1-1/2 tablespoons oil
2/3 cup instant oatmeal
2-1/2 cups all purpose flour
2 tablespoons gluten, optional
3/4 cup whole wheat flour
2 teaspoons yeast
Place all ingredients in bread machine in order recommended by manufacturer. Bake at basic setting, with a light crust. OR Use dough setting. When dough cycle is finished, remove to sprayed loaf pan. Cover with sprayed plastic wrap and let rise until double. Bake at 375 degrees for 27-32 minutes. Remove from pan and let cool on rack. This makes a 1-1/2 pound loaf.
Note: You can substitute 2-1/2 cups bread flour for the all purpose flour and the gluten.
